Cucumber Blueberry Salsa (Low FODMAP, SCD, Vegan)

A simple, refreshing low FODMAP salsa recipe that makes the perfect topping for grilled or baked fish.

  • ½ persian cucumber, diced
  • ½ pint fresh blueberries, halved
  • 1 tablespoon finely chopped jalapeno
  • 2 green onions (green part only), sliced
  • ¼ bunch fresh cilantro, chopped
  • Juice of 1 lime (~2T)
  • Sea salt, to taste
  1. Combine all ingredients in a small bowl and stir. Adjust to taste preference.
For freshest taste, make and serve on same day.
