Eggplant Ratatouille (Low FODMAP, GF, Vegan)

A dairy-free, low FODMAP vegetable side dish that makes great leftovers!

Serves: 4
  1. Heat a large pan over medium heat. Add olive oil and asafoetida, allowing to cook until fragrant.
  2. Add eggplant and saute a couple minutes, adding more olive oil, if needed, to prevent sticking.
  3. Add zucchini, diced tomatoes, sweet paprika, Italian seasoning, and tomato sauce. Cover and simmer 20-30 minutes or until ingredients are softened and fragrant.
  4. Stir in fresh basil and season with salt and pepper, to taste.
For a complete meal, I like to serve this over gluten-free noodles with a side of pesto chicken.
