Tomatillo Salsa (Low FODMAP, SCD, Vegan)

  • 1 pint fresh tomatillos, husks removed
  • 2-4 jalapeno peppers (depending on how spicy you like it), stems removed
  • Juice of ½ lime
  • 1 large handful fresh cilantro, trimmed
  • Water
  • Sea salt, to taste
  1. Place whole tomatillos and jalapenos on a baking sheet or glass baking dish.
  2. Broil on high for approximately 10 minutes (flipping once) until skins are dark and bubbly.
  3. Remove from oven and let cool slightly.
  4. In a food processor, combine roasted tomatillos and jalapenos, lime juice, fresh cilantro, and sea salt. Pulse until smooth, adding water if needed.
Serve over chicken, fish, steak, atop a taco salad, in scrambled eggs, or as a base for salad dressing.
